Plant-Based Bliss
Yes, Virginia, I am eating mainly raw food, and there’s nothing quite like it.
I prefer to think of it as living rather than raw food, although I doubt anyone reading this is going to think I’m raving about steak tartare.
As I've written elsewhere, I am not declaring myself 100% anything (raw, vegan, etc.) But I have felt the most improvement when my main food groups have included vegetables—especially greens—fruits, nuts, and seeds. These are living foods, and they make me feel alive. They provide readily available and digestible nutrients and enzymes in much higher quantities than cooked food.
You don’t have to be 100% raw in order to gain health benefits from eating more food in its natural state. I can’t imagine a future without phad thai or popcorn, but I notice a direct correlation between the amount of raw (especially green) food I eat and how I feel.
I also went from being just curious to amazed at how much there is to eat and drink within these few food categories. I have never been this excited about preparing or trying new foods. And, once you get the hang of it, it usually takes less time than cooked food. You can make simple recipes, or go full-out gourmet.
